Devilled eggs and an escape from Mayonaise.


Instead of Mayo for my Chicken Salad or Devilled eggs, Take one avocado, smash it with a fork ,then add 1 tsp of EVOO (extra virgin olive oil) or coconut oil (melted) and stir well. Add a dash of garlic if you wish.

Also, on my chicken salad and my D. Eggs, I use Dill Weed…It’s an AWESOME flavor enhancer, and it skips the need for salt. It’s delish! I have found that adding a couple of spices and avocado tastes far better than Mayo, and skips out on all that NASTY soybean oil, canola oil, and sugar (Please don’t get me started on Miracle whip!)

DEVILLED EGGS:  Hard boil 6  eggs (more if you have a large herd to feed), let cool. While they’re cooling (in ice water), Open an avocado and place in a small bowl, add one tsp evoo or coconut oil, and pass one clove of garlic through a press. (or cheat and throw some garlic powder in) I also finely chop green onions and throw those in, too.Mash it all together with a fork. Slice eggs in half long ways, remove yellows and place them into the bowl with the avocado-aise. Smash it all together with a fork and whip into a nice thick paste. Spoon into eggs. Sprinkle with Dill weed YUMM :o) NOTE: if you have kids, they LOVE helping with this one, and they will absolutely scarf these down, so make plenty.
