Cooked chicken breasts. (how many depends on how much you want. I use 2 lg. breasts for 6 “sandwiches”)
Lemonaise or PLAIN greek yogurt – 1/4 c.
2 Stalks celery
Dill Weed – 1 tbsp
Salt and pepper
Organic Romaine Hearts (for the ‘bread’)
Place cooked chicken breasts, celery, and green onion in food processor. chop until desired consistency. Place in bowl and add yogurt or lemonaise. (you CAN use mayo..I prefer using non-soy ingredients.) and dill. spread over the concave side of romaine heart and serve. These are so good for picnics, as you can take the chicken salad in a tupperware and the romaine in a bag. I usually serve grapes on the side.
