Cauliflower “Rice”


YOU NEED:

Cauliflower florets (Organic whole cauliflower is best)

A  food processor

Salt, pepper, butter, garlic to taste

Directions:

Place about one cup of florets into the food processor, and grate until you get the size/texture/consistency of rice. Place into a microwave-safe bowl and cover with paper towel. Cook on high for 5 minutes. (DO NOT ADD WATER!)

Remove from microwave and add salt, pepper, garlic and butter to taste. VIOLA! “rice”!

You can use this with any meat, or use meatballs, chili, or veggies with it..it is SO versatile 🙂 Please let me know how you like this recipe!

  1. I have also made this by grating the cauliflower on a cheese grater and then cooking in a pan with a bit of coconut oil. Both are good!
